Bread Sticks











Amish Quick Rolls
3 1/4 cups flour
1 cup lukewarm water (105°-115°)
1/4 cup sugar
1 pkg dry yeast
1/2 tsp salt
1 egg
1/4 cup shortening or oil
Using a dough hook on your mixer....
Combine yeast, water & sugar in lage bowl.
Let set until foamy.
Add salt & part of the flour....beat 2 min.
Add egg & oil.....beat 1 min.
Gradually add the rest of the flour...
Beat until it pulls away from the bowl good....
Oil the bowl the dough will set in to keep it from sticking....
Cover and let set about 20 min.
Make rolls and let rise about 1 hour....
Bake at 350° until browned as desired.....approx. 10-15 min.
This is half of a recipe so can be doubled if
need be...
For bread sticks we pinched off about like we would
for a roll and shaped it into a bread stick shape...
We had a bowl with some melted butter ready and
another bowl with parmesan cheese and garlic powder
to taste....roll the dough in the butter first and then the cheese
mixture...parchment paper is nice and easy clean-up but
if you don't have it, just spray or oil the pan....let them rise
as directed above and bake until browned as you desire...

Old Fashioned Hot Spiced Tea



2 C sugar
2 C water

Boil together to make a sugar syrup.
Add:
4 C water
1/2 C tea leaves
1 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
1 can orange juice, frozen
1 can lemon juice, frozen
1 cup pineapple juice
10 Cups boiling water

Put tea leaves and spices in cloth bag.
Options - use tea bags and just put spices in the liquid, or coffee filter tied with clean string or sewing thread.
Heat and serve with cinnamon sticks.
Can be kept warm in crock pot.

Lemon Teriyaki Chicken

This is a good, quick idea!


Lemon Teriyaki Chicken
(30 minute meal)
4 boneless skinless chicken breast
2 Tbls. flour
3 Tbls. butter
1/4 cup teriyaki sauce
2 Tbls. lemon juice
3/4 tsp minced garlic
1/2 tsp sugar
Flatten chicken to 1/2" thickness,
coat with flour. In large skillet, cook
chicken in butter over med. heat for 4-5
min. on each side until juices run clear.
Remove from skillet & keep warm.
Add the teriyaki, lemon juice, garlic & sugar
to the skillet, stir to loosen browned bits...
Return chicken to skillet. bring to a boil,
reduce heat, simmer uncovered for 2-3
min. turning to coat with sauce & heating
through.

Rooting sweet potato plant to winter over




I read on the internet how the sweet potato plant can be saved for spring planting.

We snipped some runners, cut them to 5-6 inches long, put them in a small jar and place them in some sun. My first ones rooted good in about a week. It was then potted using good miracle gro potting soil. Some will be in the garage in a south window for good sun exposure. One pot is in the house sitting in a patio door with good light. We will see how this does.

Family favorite for years. My Mom made these and taught me. Maybe my girls will carry on the tradition. Soft, made of flannel and wash very nicely.
